The brief
A full menu library for a Dubai Japanese restaurant, produced so that raw fish and a hot kitchen could sit in one body of work without either cancelling the other.
Two grounds were built for it rather than one: a near-black table for the knife work and the sushi, and pale sweeps for the plates that come out of the hot side.
Almost everything was caught in motion — sesame still in the air, soy leaving the pot, a roll under the knife — so the library reads as service rather than as a catalogue.
